Tyrese Jones wins “Jonathan Peck Skills for Life” award
Beaufort High School Football met on Dataw Island to celebrate a winning season, with varsity going 8-4 and JV 8-1. Although the entire teams worked hard for these wins, one team member, Tyrese Jones, was additionally recognized for his leadership both on and off the field. Jones was presented the inaugural “Jonathan Peck Skills for Life” award Wednesday at the Beaufort High School Football Banquet, held annually at Dataw Island. Three-hundred BHS players, coaches, school administrators, families, and Dataw members gathered in the Carolina Ballroom for a banquet and dinner hosted by Dataw Island members. The private gated community and Beaufort High School Athletics have a special connection – many members enjoy supporting our local student athletes attend games to cheer on their home crowd and offer their support to these students. Each spring, the members pool resources to host the BHS Football Banquet. Dataw member and football supporter Marilyn Peck advised and encouraged the student athletes during the awards presentation, congratulating them on an excellent season and encouraging them to reflect with gratitude. “You could not have accomplished what you did without the help of your parents, teachers, coaches and friends, so please take the time to thank every one of them.” Peck went on to recognized the students’ hard work, saying, “Success is not reserved for the talented. It is not in the high IQ. Not in the gifted birth. Not in the best equipment. Not even in ability. Success is almost totally dependent upon drive, focus, and persistence. The energy required to make an extra effort or try another approach? THAT is the secret.” Peck’s late husband, Jonathan Peck, was also an avid football supporter and this year an award named in is honor was introduced, the Jonathan Peck Skills for Life Award. The Award recognizes an outstanding student athlete who exemplifies the traits that Jon Peck held dear, on and off the field: a positive attitude, ability to get along with everyone, spirituality, appearance, communication skills, and having a plan for improving themselves in academics and in life. Tyrese Jones, the 2017 winner of the Jonathan Peck Skills for Life Award, is an exceptional yoing man with plans to join the US Air Force after graduation. Congratulations, Tyrese, for winning this prestigious award!

The Perfect Thanksgiving Memento... Pimento!
When we say “pimento cheese” to most non-Southerners, they don’t know what we’re talking about. True, part of it is the pronunciation (pa-men-uh) that is confusing, given the Southern fondness for mangling the English language when convenient. But pimento cheese has been a staple of the cuisine down here for ages because of its easy preparation and extraordinary versatility. Spread on crackers, served in celery slices, used as a topping for hamburgers or steaks or fancied up into a cheese ball, pimento cheese is one of those dishes that always has a place at a Southern gathering. Even if you’re not from these parts, if you bring pimento cheese to a party, they’ll think you’re a local. And there are as many ways to x it as there are to serve it, from classic to the “designer” variety. Thomas Keller of the French Laundry restaurant in Napa puts crème fraîche in his. Southern food writers Matt and Ted Lee make theirs with grilled red peppers and cream cheese. Garden and Gun insists on using Duke’s Mayonnaise, while Southerner Craig Claiborne (the dearly departed food editor of the NYT) added garlic, lemon, and green onions. Paula Deen throws in both Monterey Jack and cream cheese, and serves it with a platter of crudités. All of the authentic recipes recommend that for correct consistency, you should run your cheese through a food mill. No time for that? Get out the Cuisinart. Really in a hurry? Avoid that stu in the supermarket and go pick some up at Lowcountry Produce downtown. Their pimento cheese has been properly run through a food mill and it comes in regular and hot. Here’s a basic recipe to get you started. Dream up your own variations! Classic Pimento Cheese A block of sharp cheddar cheese, cut into chunks Mayonnaise (preferably Duke’s), enough to reach desired consistency, + or - ½ C 1T chopped onion (or ¼ C chopped green onion) 2T Worcestershire Dash of cayenne, or to taste Small jar of pimento, drained Salt and pepper to taste Combine all ingredients except pimento in a food processor and blend well. Add pimento and give one more whiz. Correct seasonings.

Met Opera Comes to Beaufort
To many Wagner fans, “Tristan und Isolde” is one of his finest operas, even though he referred to it as “music drama”, blending together the poetic, visual, musical and dramatic arts. Today, Wagner's total concept of art is embodied in Tristan, and often described as the beginning of modern music.
